
Coffee harvesting in Colombia is a meticulous process that requires attention and dedication. It is generally carried out between October and January, when the cherries reach optimal ripeness.
Harvesting is done by hand, allowing only ripe cherries to be selected. This method ensures coffee quality, as underripe or overripe cherries are excluded from the harvest.
Once collected, the beans are sun-dried and processed to remove the pulp. This stage is crucial for developing the characteristic flavor of Colombian coffee.
